步骤1:藕我选用的是梢子藕(藕的最尾部一节);

步骤2:今天用的是专门搓藕蓉的工具

步骤3:将藕放到工具上擦;

步骤4:擦好的藕蓉非常绵软但是水份非常足;

步骤5:将藕蓉里面的水份挤出一部分,但不要挤得太干,挤得太干,炸出来的丸子会比较柴;

步骤6:将生姜也擦成生姜蓉;

步骤7:小葱切成葱花;

步骤8:把藕蓉里放入生姜蓉,葱花,加入适量的盐和胡椒;

步骤9:拌匀后,搓成一个个的小丸子;

步骤10:锅里烧油;

步骤11:烧至5成热,放入搓好的藕丸子;

步骤12:中火炸至表面金黄即可出锅。藕丸的烹饪技巧1.藕一定要选梢子藕,中间部位的藕水份大,太过细腻,吃起来会觉得太腻;2.藕蓉的水份一定不能过干,要不口感柴而且不容易成团;3.炸藕丸子一定不能太大的火,要不外面糊了,里面却没有熟。
