“good egg”别直译为“好鸡蛋”!这个意思你一定得知道

egg大家都知道是“鸡蛋”,所以很多同学看到good egg,就会直译为“好鸡蛋”,从字面看确实是这个意思,但更多时候这个表达被拟人化了,用来形容一个人是个“好人;正人君子;让人喜欢的人”。

他是个好人,如果你跟他混熟了,肯定会喜欢他。

Tom is such a good egg that everybody wants to be his friends.

汤姆是个好人,大家都愿意同他交朋友。

中文里有“坏蛋”,英文中也有对应的“bad egg”。两者稍有不同,“bad egg”用来形容让人讨厌的人,在程度上不像中文中“坏蛋”那么深,但都是贬义。再就是“bad egg”在口语中不太常用,没有“good egg”的使用频率高。

“egg”应该是我们生活中最离不开的食材之一了,比如番茄炒蛋,是一道受很多人喜欢的菜肴。同样,鸡蛋也是外国人离不开的早餐食材之一。

但鸡蛋的做法有好多种,对应的英文你都知道吗?

Boiled egg 水煮蛋

我们最常见的,也一直被认为是最健康的吃鸡蛋方式是煮鸡蛋(boiled egg)。但是中国人的煮鸡蛋和西方的煮鸡蛋不太一样。

中国人吃的水煮蛋基本会是全熟的鸡蛋(well-down/hard boiled egg)。从内到外都是熟透的。

但是外国人吃的水煮蛋并不一定是全熟的,也就是溏心蛋(soft boiled egg),甚至有可能是很生的,需要用一个蛋杯(egg cup)来托着鸡蛋,从上面开个口来用勺子吃。

所以如果你在点餐的时候只简单地说一句“I want my egg boiled.”,那你拿到手里的鸡蛋可能就跟你平常吃的不太一样了。

在烹饪中,煎蛋卷是用打散的鸡蛋在煎锅里用黄油或油煎制而成的(不像炒蛋那样搅拌)。煎蛋卷通常是折叠并将奶酪、韭菜、蔬菜、蘑菇、肉类(通常是火腿或培根)等馅料包裹在内的,又或者是上述几种馅料的组合。

据说煎蛋卷是中国人发明的,途径印度传入中东和欧洲。最后跟随移民才到了美国。

Scrambled egg 炒蛋

Scrambled eggs is a dish made from eggs (usually chicken eggs) stirred or beaten together in a pan while being gently heated, typically with salt, butter and sometimes other ingredients.

炒蛋是把蛋(通常是鸡蛋)在平底锅里搅拌,然后慢火加热。通常加入盐、黄油和其他配料。

很多人认为炒鸡蛋的英文应该是“fried egg”,但实际上炒蛋所对应的英文是“scrambled egg”。国内炒蛋与国外炒蛋最大的不同在于油的用量和加热的程度。一盘正宗的炒蛋应该是有着丝滑和鲜嫩的口感,这一切都在于西方人在做炒蛋时加热的速度很慢且基本稍微断生就会出锅。

当然,想要炒出口感嫩滑的鸡蛋还有一个秘诀:那就是加入牛奶。

Fried egg 煎蛋

A fried egg is a cooked dish made from one or more eggs, which are removed from their shells and placed into a pan, usually without breaking the yolk, and fried with minimal accompaniment. Fried eggs are traditionally eaten for breakfast in many countries but may also be served at other times of the day.

煎蛋是由一个或多个鸡蛋做成的熟菜,鸡蛋去壳,放入平底锅中,通常不打破蛋黄,静静煎制。煎蛋是许多国家的传统早餐,但也可以在一天内的其它时间食用。

在煎蛋时也会出现与水煮蛋类似的问题,那就是我们对于蛋的熟制程度的要求。

在美国,通常煎蛋有三种熟制程度:半熟(over medium),全熟(over hard),以及太阳蛋(sunny side up)。

其中半熟和全熟的蛋都会是双面煎,其区别在于蛋黄(yolk)是否完全成熟。如果是溏心的煎蛋就被称“over medium”,而蛋黄全熟的煎蛋就是“over hard”啦。

什么是太阳蛋?

An egg cooked “sunny-side up” means that it is fried just on one side and never flipped. The yolk is still completely liquid and the whites on the surface are barely set. You can cover the pan briefly to make sure the whites are cooked or baste them with butter.

太阳蛋是指鸡蛋只煎一面,不翻过来。蛋黄(yolk)还是完全液态的,表面的蛋白(egg white)几乎没有凝固。你可以短暂地盖上锅盖,以确保蛋白成熟,或者在上面涂上黄油。

魔鬼蛋,也被称为填充蛋、俄罗斯蛋或装饰蛋,是一种煮熟的鸡蛋,将鸡蛋去壳,切成两半,用蛋黄和蛋黄酱、芥末酱等混合制成的糊状物填充。
