一款不需要技术含量的小饼干!

搅一搅,拌一拌,烤一烤就可以享用的意式脆饼,充满伯爵茶和柑橘清香。

少油低糖,口感特别脆。嘴巴寂寞的时候让它陪你吧!

意式biscotti,源于托斯卡纳地区的香脆杏仁小饼干,可以说是意大利“国民饼干”之一。意式脆饼看起来很朴素,但浓浓伯爵茶香、橙子和果仁香气结合制造出一种高级感,越嚼越香。

油的用量少到可以忽略不计,糖也不算多,是多吃几块也不会太有罪恶感的减脂期友好小甜饼噢!

Biscotti are probably one of the easiest cookies to make, foolproof! What's also amazing about these Italian biscuits is that they do not require much oil, and are not overly sweet, thus not as guilty as other types of cookies.

These biscotti are ultra crunchy, filled with refreshing scents of citrus and Earl Grey tea. Although they don't look too fancy, I find them satisfying, almost addictive. If you are up for something unique, try this Earl Grey orange biscotti recipe! They are perfect holiday treats :)

约12块饼干

Makes about 12 biscotti

中筋粉 110-120克

泡打粉 半茶匙

大鸡蛋1个(去壳55克左右)

砂糖 35克(清甜,可加糖)

植物油或融化黄油 5克

伯爵茶包 2-3个

1只橙子皮屑

杏仁/杏仁片 20克

糖渍橙皮 30克

110-120g AP flour

1/2tsb baking powder

1 large egg

35g sugar

5g vegetable oil/melted butter

2-3 Earl grey tea bags

zest of 1 orange

20g almonds (kernel / sliced)

30g cut mixed peel

步骤 Instructions

鸡蛋、砂糖、油、橙子皮屑混合,搅拌均匀
Whisk together egg, sugar, oil, zest of orange until well blended.

干粉类(面粉、泡打粉、伯爵茶叶)混合,倒入蛋液中拌匀,然后加入糖渍橙皮和杏仁片,混合成面团(有点干也没关系)
Combine flour, baking powder, Earl grey tea (without the tea bags of course). Add flour mixture to egg mixture. Stir in mixed peel and almonds, combine with a spatula to form a dough.

面团转移垫了烘焙纸的烤盘上,太松散就用手聚拢,整成约2厘米厚度的面团。放入预热好165摄氏度烤箱烤30-35分钟。
Transfer dough to a baking sheet lined with parchment paper, gather loose parts with hands. Form dough in to a log of about 2 cm thickness. Bake at 165 C for 30-35 min. 

烤好的面团取出稍放凉,切成厚度1-2厘米的饼干(比较容易碎,建议用利刀),在烤盘上铺平,165摄氏度继续每面烤5-10分钟,等放凉变脆了后享用。

Let cool the log, then cut  into 1-2 cm slices. Continue baking at 165 C for 5-10 minutes each side until lightly toasted.

  • 中筋粉* 110-120克

  • 泡打粉 半茶匙

  • 大鸡蛋一个(净55克)

  • 砂糖 35-45克

  • 油 5克

  • 配料** 50克

*巧克力味/咖啡味biscotti:将15-20克面粉替换成可可粉/速溶咖啡粉

**配料举例:杏仁、榛果、开心果、水果干(朗姆酒泡软)、烘焙用巧克力豆……

充满伯爵茶和柑橘香的意式小饼味道清甜,口感特脆,配茶完美。

它虽然不会像重油重糖的饼干让你一下子爱上,但你会慢慢感受到这款偏成人风味甜饼的独特。

可可脆饼、咖啡脆饼各有各的特色,这两款蘸咖啡蘸冰激凌都很美妙!用上面的百搭公式按自己喜好自由发挥会有很多惊喜组合。

想要增加颜值(和热量)可以融化白/黑巧克力随意洒在脆饼上成丝带状(放凉凝固),做节日礼物也会让人感觉用心(●'◡'●)
